Tuottajan esittely
Untamonloukon Savujuustua on Laihian Jokisalossa toimiva savustamo, joka on toiminut vuodesta 2020 alkaen. Yrityksen omistaja Jaakko Järviö savustaa ja pakkaa suomalaiset juustot kotonaan Untamonloukolla. Vanhalla Maatilalla kaukana keskuksista, keskellä puhdasta luontoa, savustuvat eri suomalaisten valmistajien juustot. Savustettavat juustot ovat valmistettu kotimaisesta maidosta ja ne savustetaan käsityönä aidolla savulla, ilman esansseja tarkkaan Jaakon hiomalla reseptillä.
Savustaminen on Jaakko Järviölle intohimo, harrastus ja elinkeino. Toiminta on kehittynyt rakkaan harrastuksen kautta sivutoimiseksi yrittäjyydeksi ja tänäpäivänä työllistää päätoimisesti.
”Ensimmäiset juustot savustin muistaakseni vuonna 2017, kun näin lehtiartikkelin aiheesta. Olen intohimoinen ruoanlaittaja ja tykkään kokeilla aina jotain uutta. Hankin välineistöä savustamiseen ja kehittelin menetelmiä. Savujuustot maistui perheenjäsenille ja pikkuhiljaa kaverit ja sukulaiset saivat myös omansa. Kohta huomasin olevani lähiruoka ketjuissa (REKO) savujuustoineni.”
